My family emigrated to Australia from England following WW2. My Mother had many traditional recipes from her family's regional base. Parkin is a slightly sticky, slightly heavy cake, easily made and just the best accompanyment for a mid-morning or afternoon cuppa. Crucial to the success of the recipe is to cook it in a COOL oven. If the oven is too hot, the outside of the cake will be like hard ginger biscuits.
WARNING....It is verrry easy to eat!
Parkin.
Ingredients:
1 pound of oatmeal (ground is best)
1/2 pound of brown sugar
6 ounces of butter or dripping.
1/2 pound of self raising flour (or, a half pound of plain flour and 1 teaspoon of baking soda)
1 pound of syrup or treacle.
1 1/2 teaspoons of powdered ginger
1 teacup of milk or water.
Method:
Mix dry ingredients.
Add syrup, butter and milk.
Mix well and pour into a greased tin.
Bake in a cool oven (160) for 90 minutes.
The aroma will drive you crazy!!
