Cruising in the tropics you will find bananas almost everywhere - slightly over-ripe ones (best for this recipe) are a dime a dozen. Banana Bread was an absolute favourite on our boat AND easy to make. When we baked we normally made two or three loaves at a time as they stay "fresh" for a long time - that is if my wife could keep me away from them.

There are many recipes for banana bread (please add others to this thread under this heading).

Banana Bread

1 3/4 cups all-purpose flour

2 teaspoons baking powder

1/4 teaspoon baking soda

1/2 teaspoon salt

2/3 cup white sugar

1/3 cup butter, softened

2 eggs

1 cup mashed banana

1/2 cup chopped walnuts

Directions

1 Grease an 8x4 inch loaf pan. Preheat oven to 350 degrees F (175 degrees C).

2 In a large mixing bowl, sift together flour, baking powder, baking soda, salt, and sugar. Add butter, eggs, nuts, and mashed banana. Beat until well blended.

3 Pour batter into prepared pan and bake about 1 hour, or until a toothpick inserted in the center of the loaf comes out clean.

It's delicious!

I use just about the same recipe, only I leave out the salt and do 1 tsp baking powder and 1/2 tsp baking soda. I use the same recipe and swap out the bananas for zucchini, carrots, papaya, mango... whatever. Depending what I am making it with I add some cinnamon and vanilla. This mornings loaf is papaya banana and its delicious!

How do you store your loaves? We don't have a fridge and with the heat and humidity here in FL the last few slices of some loaves have been going off so I am only making one at a time as we are ready for a new loaf.

I love baking! This is a pretty good recipe as far as I can tell. But you know what would make it even better...cinnamon and maybe some brown sugar. I use them in my recipe.

Very green unripe bananas can be chipped and fried. They taste like chips, so if real potato's are not available give this a try. I first ate this chippy substitute when in what was Zaire, 2000km up-river at Yakusu.
