When we were crusing we always missed fresh eggs after a week out. I was taught by a cruser that if you buy fresh eggs at a chicken farm or unwashed eggs that you may keep them in a jar unrefrigerated for up to a month. The second best option is to buy eggs at the store and rub vegtable oil on them. This helps but it is not as good as the natural oil supplied by the chicken.

Another friend used to like a gin and tonic in the evening. He made his own tonic water using limes boiled down and taking the syrip and adding water and putting it into a small co2 selzer maker. The gin ,vodka and rum were purchased by the gal. at a liquir warehouse in Puntarenas Costra Rica. Just bring your own bottle or jug. (Cheap) It makes for great bargaining when crusing.

When in Tatachula Mexico in the harbor get your fresh fish from the fishermen. If your luckey they will invite you over for ceviche . Usually only the men are invited. Sorry but (When in Rome)

Lin and Larry Pardey have a wonderful book: "The care and feeding of the offshore crew" W. N. Norton & Company 1980. On eggs they try to get unrefrigerated eggs and simply turn them over every week or so to keep from drying out through the shell (why you oil them). Since they cruise for months on a small boat without a motor or refrigeration, they have come up with lots of recipes and tips for storing food.

We bought 20 dozen refrigerated eggs at Tesco in Plymouth England. They were stored in a locker low in the boat directly over the bilge. I turned them every three-ish days and still had good eggs when we made Annapolis six weeks later. If you miss fresh eggs a week out you aren't buying enough eggs.

I wonder if individual eggs, sprayed with a little cooking oil, could be preserved by using a small bag and vacuum packing tool.

Is that (1) feasible?

(2)the most stupid suggestion you have ever heard?

or, (3) don't stop taking the pills?

Ahhhh David your really setting yourself up

We always buy eggs that have not been in the refer and they seem to last a long time. Better still is unwashed eggs that you buy in a market. Even in the heat of Mexico we have not had too much trouble. But we always crack the egg into a cup before dumping in with the rest. Learned the hard way and had to toss out a 1/2 dozen a couple of times because of one bad one.

Mexico to Marquises eggs lasted almost all the way across. At least we ate them all up before arriving! We bought powered eggs for baking and that worked out excellent couldn't taste the difference.
