Eating on the Wild Side
After hearing a radio interview I recently purchased a new book titled "Eating on the Wild Side".
The author, Jo Robinson, discusses modern day agriculture and harvesting techniques and the book has opened my eyes. She talks about different varieties of fruits, vegetables and legumes and I was surprised to learn how much flavor and nutrition has been intentionally bred out of common varieties of produce in favor of higher yield and hardiness to allow for long distance transport.
She also talks about the storage of fruits and vegetables and the best ways to retain or enhance their nutrients and antioxidants . Very educational.
Shopping at a farmer's market or in organic section has a whole new meaning.
